The good news is my portion of the course has been doubled for the fall. Students felt it was the most pertinent piece of the curriculum! I think emphasis should be placed on ubiquitous additives like artificial colors; the general public seems to not even think about such things. And, although probably already in your plan, coconut oil should have a good study specifically for it, especially about its history and how the public came to believe that it was unhealthy.
