Pickapeppa Sauce

One of the dishes I will be cooking with the “guys” tonight includes this insanely easy recipe. I discovered Pickapeppa sauce over 15 years ago when a caregiver at my child’s daycare center made Jerk Chicken from her “secret recipe”. I would re-schedule some of my dental patients on the days it was served and sneak on over to the center for some of Marlene’s amazing chicken. It took me more than 4 years to convince Marlene to divulge that recipe. When she did, she just chuckled in her beautiful Jamaican accent- “Susan, it’s just Pickapeppa!”

Pickapeppa Sauce is an authentic sauce made in Jamaica that contains real ingredients-ones you can pronounce with a 3rd grade reading level. Its found in the hot sauce section of most supermarkets it’s spicy but definitely not “hot”.

 

“Pickapeppa” Jerk Chicken

 

8 chicken legs or breasts

1 bottle Pickapeppa Sauce

2 medium onions sliced

2 teaspoons dried thyme ( or any other herb you like)

24-36 hours before:   Place the chicken legs in a roasting pan, cover with Pickapeppa sauce,  cover with foil and refrigerate.

Add sliced onions over top of chicken sprinkle with thyme

Put pan of chicken into a 350 oven for 45 minutes with foil lightly on top.

Take foil off and cook for an additional 15 minutes.

Serve over rice or quinoa

Note: you can also add sliced carrots, potatoes and sweet potatoes or any other veggie you like to the roasting pan and make this a one-dish dinner.
