Storm Soup

This version of Stone Soup is great for clearing out your freezer when a storm related power outage is thawing your frozen food. If you are lucky enough to have a gas stove or a grill outside, you can make this soup.  If you’re not so lucky, check in with your neighbors who might have a gas stove and you can make this soup even more fun because its great to cook with neighbors.

Here at the Rubin Rodeo, we are in day 3 of what looks to be a long power outage thanks to Frankenstorm Sandy. I’m just greatful that I have running water, a gas stove and a way to get off of my street. Many of my pals in NYC and NJ are not nearly as fortunate.

Many of these ingredients are probably already in your kitchen. Be creative, I promise it will taste yummy!
Ingredients:
olive oil
1 onion chopped
2 carrots
2 stalks celery
1-2 cloves of garlic
1 can beans, rinsed and drained
I box of Chicken stock, or if you have frozen chicken stock thawing in your freezer use that.
Tomato paste, or tomato sauce, whatever you have
Herbs such as oregano, thyme and rosemary either dry from your spice drawer or fresh from your herb garden. a splash of pesto could work too.

Frozen veggies. could be peas, corn, spinach. whatever you have in your freezer that is melting!

Procedure:
In a good sized soup pot, saute onion and garlic in  olive oil
Add diced carrots & celery and saute until soft, 3-5 minutes

Add  chicken stock, tomato sauce, beans along with melting veggies from freezer and simmer for 5-10 minutes
Add spices simmer 5 minutes more and serve
If using pesto, add a small amount on top of soup.
