Frozen strawberries, bananas, ice & coconut milk

Today was the long awaited opening day of Camp Ballibay. For me, that means smoothies.  As the camp “food expert” my job gives me the opportunity to meet parents as they are dropping off their kids at camp and tell them about how great our food and our garden is this year.

I travel up to the main office with my equipment: a Vitamix mixer, a few bags of local frozen strawberries, frozen pineapple chunks, over ripe bananas, coconut milk and some ice. The campers and their parents love the different combinations we create. My most favorite is very simple: a couple of bananas, some ice, some coconut milk. No additional sweeteners needed.

Campers and staff also love schmoozing at smoothie time. One new face at camp this year is camp mom and kitchen cook,  Kylie Mikuta. Kylie is another enthusiastic food ambassador for the camp. We are off to a great start this summer.
